Preheat the oven to 350 F. Prepare a 1 ½-quart baking dish with non-stick spray and set aside.

Place strawberries and granulated sugar in a large bowl and mix.

Add cornstarch and vanilla extract and evenly coat the berries. Pour into the baking dish.

In a medium sized bowl, whisk together the flour, oats, granulated sugar, brown sugar, sea salt and ground cinnamon.

Melt butter in a small saucepan and pour into the medium bowl. Mix well.

Crumble evenly over the strawberries and bake 35-40 minutes until sides start to bubble and the top is golden brown.

Cool slightly to allow it to thicken up before serving. Serve warm with vanilla ice cream on top and enjoy!

Hint: Bake sure that your topping is golden brown and you can see the edges of the dish bubbling to ensure the bottom layer bakes off some moisture. The dessert will still be very juicy, but you do not want it to be too runny.

How to Store our Strawberry Crisp Recipe

Here are some helpful hints to store this dessert.

  • Refrigerator: Once cooled, place in an airtight container for 3-4 days.
  • Freezer: I wrap tightly in plastic wrap and foil to prevent freezer burn and this can last up to 3 months.
  • Reheating: Microwave on medium heat until warmed. If it is still in the baking dish, you can rewarm in the oven until warmed through.
  • Make Ahead: If making in advance, you can prep the whole dish and pop it in the freezer to bake later. Again, when freezing I prefer to use plastic wrap and tinfoil for extra protection against freezer burn, and leave it up to 3 months. Thaw completely and bring to room temperature on the counter prior to baking, ensuring you remove the tinfoil and plastic wrap.

Top Tip

We have found that Old Fashioned oats yield the best texture in our crisp topping. Using quick oats or instant oats will result in a more mushy topping, and we don't recommend substituting one for the other. The larger flakes in Old Fashioned oats will give the crisp a more well-defined and crunchy topping.

Frequently Asked Questions About Our Strawberry Crisp Recipe

Here are the most common questions about our Strawberry Crisp Recipe.

Can I use frozen strawberries?

A reason why we love the versatility of this recipe is that you don't need to have fresh strawberries on hand to enjoy this dessert. If you are opting to use frozen berries, just be sure to thaw and drain them to avoid bringing any excess moisture into the dish.

Can I make this dish in advance?

Yes, you can. To make this dessert a day in advance, simply follow all the steps as usual without baking, and wrap in plastic wrap. Refrigerate for up to one day (any longer and the crisp topping may become soggy). When it comes time for baking, set out on the counter to come up to room temperature while your oven preheats, and bake.

What is the best way to store my leftover Strawberry Crisp?

Any leftover strawberry crisp can be portioned out into an airtight container and stored in the refrigerator for up to 4 days. It can also be frozen for up to 3 months.

What do you recommend serving with Strawberry Crisp?

Our personal favorite is a scoop of vanilla ice cream, but you can also top it with whipped cream, and even more fresh berries. Try a drizzle of caramel sauce for an extra indulgent treat.

Can I adjust the sweetness of this Strawberry Crisp?

Absolutely. You can add more of less granulated sugar to reach your preferref sweetness level.
