Peppermint Brownie Cookies Ingredients

See the recipe card below for the exact quantities of each ingredient.

  • Brownie Mix: The shortcut base that gives these cookies their rich chocolate flavor.
  • Vegetable Oil: Keeps the dough moist and contributes to the fudgy texture.
  • Egg: Binds the ingredients together and adds structure.
  • Peppermint Extract: The key ingredient for that refreshing holiday flavor.
  • White Candy Melts: Add sweetness and a pretty finish when melted on top.
  • Crushed Candy Canes: A festive garnish that adds crunch and color.

For this recipe, you'll want to have on hand a cookie sheet, measuring cups and spoons, mixing bowl and parchment paper.

Variations

  • Espresso Powder: Add ½ teaspoon to enhance the rich chocolate flavor.
  • Dark Chocolate Chips: Stir in for extra decadence and a gooey texture.
  • Peppermint Bark: Use chopped pieces on top instead of candy canes for more chocolatey crunch.
  • White Chocolate Chips: Mix into the dough for a creamy contrast.
  • Vanilla Extract: For a more classic brownie flavor, replace the peppermint extract entirely.

Drop balls of dough using a 1½ tablespoon cookie scoop.

Recipe Tips

  • Line your Baking Sheet: Use parchment paper or silicone mats for easy cleanup.
  • Don't Overbake: The centers should still look slightly soft when you remove them, they'll set as they cool.
  • Add Toppings While Warm: Candy stick best to hot cookies fresh from the oven, but you might want to push lightly on larger pieces.

Peppermint Brownie Cookies Recipe FAQs

Can I use homemade brownie batter instead of boxed mix?

Yes, but keep the consistency thick, similar to a cookie dough, so they hold their shape.

How do I make the tops shiny like brownies?

Mix the batter by hand and avoid over-beating, this helps create that signature crackly top.
