- 200 grams packed brown sugar 1 cup
- 1 stick butter, unsalted
- 1 loaf Brioche bread cut into 1” cubes
- 2 cups eggnog
- 8 large eggs
- ¼ cup maple syrup
- ½ tablespoon pure vanilla extract
- 1 teaspoon ground nutmeg
- 1 teaspoon sea salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground allspice
Prepare a 9x13 baking dish with non-stick spray. Set aside.
Melt brown sugar and butter over low heat. Pour half of the brown sugar mixture into baking dish and reserve the rest.
Place bread cubes in the dish, then pour remaining sugar mixture over top.
In a large bowl, whisk together eggnog, eggs, maple syrup, vanilla, ground nutmeg, sea salt, ground cinnamon and all-spice.
Pour mixture all over bread and lightly press down with a spatula to ensure all the bread is wet.
Cover with tinfoil and place in the fridge for at least 8 hours.
When ready to bake, preheat the oven to 325F.
Leaving the foil on, bake 45 minutes, then remove the foil. With the dish still in the oven, increase the temperature to 375F bake for an additional 15 minutes or until the top is golden.
- Slightly dried-out brioche absorbs the custard more effectively; if time permits, leave your bread cubes out on a large sheet pan during the day and assemble in the evening.
- It gives the best texture and allows the flavors to fully absorb.
- Insert a butter knife into the center, it should come out mostly clean.
- Allows the custard to set by resting the French toast bake prior to serving.
- A splash of maple syrup or powdered sugar finishes it off perfectly, but you can add fresh fruit for a fresh addition.
