Banana French Toast Casserole

Equipment

Ingredients

  • ½ stick butter, unsalted melted
  • 10 slices brioche bread divided
  • 4-6 bananas sliced and divided
  • 1 cup semi-sweet chocolate chips divided
  • 1 ½ cups whole milk
  • 6 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon ground cinnamon

Instructions

  • Spray a 9x13 casserole dish with non-stick spray.
  • Add melted butter to the bottom of the dish, then layer slices of bread to cover it.
  • Add slices of banana, then sprinkle ½ cup of the chocolate chips.
  • Repeat the layers with more bread, bananas, and remaining chocolate chips.
  • In a medium bowl, whisk together milk, eggs, vanilla and cinnamon.
  • Pour the mixture over the layers, making sure all the slices of bread are soaked.
  • Cover with foil and refrigerate for at least 3 hours or overnight.
  • When ready to bake, preheat oven to 325F. Bake for 45 minutes covered (spray the inside of the foil first), then increase to 375F and bake uncovered for 10–15 minutes until golden brown.

Notes

  • Sturdy bread matters! Use thick slices of stale bread or brioche to prevent sogginess.
  • Lightly spray the inside of the foil to prevent it from sticking to the top of the bread.
  • Let it sit at room temp while the oven preheats for more even baking.
  • Distribute bananas and chocolate chips evenly for balance in every bite.
  • Let it rest slightly before serving, this allows it to set, and slices come out more cleanly.
