Ingredients

  • 3 8- ounce bricks cream cheese cubed
  • 4 cups rotisserie chicken shredded
  • 3-4 cups cheddar cheese shredded and divided
  • 1 ½ cups blue cheese dressing
  • ½-¾ cup Frank’s Red Hot sauce Buffalo or Original
  • 1 cup cottage cheese blended, or sour cream

Instructions

  • Preheat oven to 350F. Spray a large 1.5-quart oval casserole dish with non-stick cooking spray.
  • Heat a large skillet over medium-low. Add cream cheese and stir regularly until melted. You can squish down some of the cubes as they soften to help it melt faster.
  • Add shredded chicken, half the cheddar cheese, blue cheese dressing, hot sauce and cottage cheese or sour cream, if using.
  • Heat up for a few minutes, mixing well to combine, then transfer to prepared baking dish, topping with remaining cheddar cheese.
  • Bake 15-20 minutes, until cheese is bubbling on the edges, then broil if desired.
  • Top with sliced green onions, blue cheese crumbles if desired, and serve with celery, carrots, tortilla chips or your favorite crackers.

  • Shred Chicken Small: Smaller pieces help the dip stay creamy and easier to scoop.
  • Broil Carefully: A quick broil at the end gives the top a bubbly, golden finish.
  • Adjust the Heat: Start with less hot sauce if serving a crowd with different spice preferences.
