Cake Brownies from Brownie Mix

Equipment

Ingredients

  • 1 15.6- ounce brownie mix 432 grams
  • 1 stick butter, unsalted melted (½ cup)
  • 2 large eggs room temperature and lightly beaten
  • 1 cup chocolate chips (optional)

Instructions

  • Preheat oven to 350F and line a 7x11 dish in parchment paper. Set aside.
  • In a large bowl add boxed brownie mix, melted butter and beaten eggs. Stir until incorporated with a spatula; it will be thick batter.
  • Fold in any chocolate chips, if desired.
  • Add dough to prepared dish and spread out evenly with a spatula (note: the batter is very thick; you can add another piece of parchment paper on top to help to spread it).
  • Bake in preheated oven for 18-20 minutes or even a toothpick comes out of the center with moist crumbs.
  • Allow them to cool in the pan on a wire rack, then remove and slice with a sharp knife.

Notes

  • The batter will plump and spread so if it is not perfect in the dish before baking, don’t worry
  • You can use an 8x8 or 9x9 pan, they will just be thicker. Baking time may be a little longer.
  • Use parchment paper for easy removal and cleanup.
  • Insert a toothpick in the center—if it comes out with moist crumbs, they’re ready.
  • Allow brownies to cool in the pan before slicing to help them set properly.
  • Allow your eggs to come to room temperature, this helps with even mixing and a better texture.
