Ingredients

  • 16 ounces dark chocolate chips
  • 16 ounces white chocolate chips
  • 88 g peppermint candies about 11 peppermint sticks
  • ½ teaspoon peppermint extract

Instructions

  • Line a 9x13 baking pan with parchment paper and set aside.
  • In a double boiler, melt the dark chocolate chips over low heat, stirring regularly. Then add half the peppermint extract.
  • Stir to combine and pour into prepared baking pan and spread an even layer of dark chocolate.
  • Refrigerate pan until chocolate has set, about 15-30 minutes.
  • Repeat to make a layer of white chocolate, then pour over the chilled chocolate layer.
  • Spread quickly to prevent the bottom layer from bleeding into the white chocolate.
  • Sprinkle as much crushed peppermint as desired and gently pressing them in.
  • Refrigerate pan until chocolate has fully set, about 15-30 minutes, then break bark into pieces.

Notes

  • Use quality chocolate, it makes a big difference in flavor and texture.
  • Let the dark chocolate set before adding the white layer to keep them distinct.
  • Smaller pieces stick better and make cutting easier.
  • Melt chocolate slowly over low heat in the microwave or use a double boiler for smooth results.
  • Chill until fully hardened before breaking into pieces.
  • If you set in the fridge do not leave longer than 30 minutes as condensation will build up
  • Setting on the counter will take about 2 hours
