Easy Chicken Thigh Marinade

Equipment

Ingredients

  • 2 pounds boneless skinless thighs
  • ¼ cup extra virgin olive oil
  • 2 tablespoon brown sugar
  • 2 tablespoon soy sauce
  • 1 ½ tablespoon dried thyme
  • 1 tablespoon lemon juice freshly squeezed
  • ½ tablespoon sea salt
  • 1 teaspoon dried parsley

Instructions

  • Add everything into a large bowl and mix well to combine.
  • Cover with plastic wrap and refrigerate for at least one hour. The longer you allow it to marinate, the more flavors will infuse into the chicken (no longer than 24 hours is recommended).
  • When ready to cook, preheat oven to 425F and place chicken thighs on a baking pan.
  • Bake in the oven for about 15-18 minutes depending on the thickness of the thighs (an instant read thermometer should read 165F when inserted into the thickest part).
  • Allow the chicken to rest for 10 minutes before serving.

Notes

  • For best results, allow the chicken to soak in the flavors overnight in the fridge.
  • Fresh citrus juice enhances the marinade’s flavor more than bottled juice.
  • Give space between each piece to ensure even cooking.
  • After cooking, allow it to sit for 10 minutes before serving for maximum juiciness.
