Eggnog French Toast Bake Recipe

My Eggnog French Toast Bake is the perfect combination of festive eggnog and fluffy, golden French toast squares that creates a comforting dish perfect for Sunday breakfast or brunch.

Equipment

  • 9x13 Baking Dish

Ingredients

  • 200 grams packed brown sugar 1 cup
  • 1 stick butter, unsalted
  • 1 loaf Brioche bread cut into 1” cubes
  • 2 cups eggnog
  • 8 large eggs
  • ¼ cup maple syrup
  • ½ tablespoon pure vanilla extract
  • 1 teaspoon ground nutmeg
  • 1 teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice

Instructions

  • Prepare a 9x13 baking dish with non-stick spray. Set aside.
  • Melt brown sugar and butter over low heat. Pour half of the mixture into baking dish and reserve the rest.
  • Place bread cubes in the dish, then pour remaining sugar mixture over top.
  • In a large bowl, whisk together eggnog, eggs, maple syrup, vanilla, ground nutmeg, sea salt, ground cinnamon and all-spice.
  • Pour all over bread and lightly press down with a spatula to ensure all the bread is wet.
  • Cover with tinfoil and place in the fridge for at least 8 hours.
  • When ready to bake, preheat the oven to 325F.
  • Leaving the foil on, bake 45 minutes, then remove the foil. With the dish still in the oven, increase the temperature to 375F bake for an additional 15 minutes or until the top is golden.

Notes

  • Brioche bread can easily be substituted with French bread, challah bread, or even croissants. 
  • When removing from the oven, your French toast bake may still look jiggly in the centre, but the custard mixture will continue to firm and set as it cools. 
  • Top with powdered sugar, a drizzle of pure maple syrup, and any berries of your choice (optional).
