Ingredients

  • 3 cups ice
  • ½ cup pineapple juice
  • cup blue curacao
  • cup coconut rum
  • cup cream of coconut
  • honey if rimming
  • shredded coconut if rimming

Instructions

  • If rimming your glasses, dip the rim in honey and then shredded coconut.
  • To a blender add ice, pineapple juice, coconut rum and cream of coconut. Blend for about 1 minute or until smooth.
  • Pour in prepared glasses with or without additional ice.

Notes

  • Cream of Coconut is not the same as coconut cream or coconut milk, its thinner than coconut cream and thicker than coconut milk. It is silky, and the consistency of sweetened condensed milk.
  • A cold glass helps keep the texture thick and icy, while also adding to the wintery vibe of this drink.
  • Press gently when dipping the rim of your glass into the coconut flakes so they stick evenly.
  • Blend for a full minute to ensure the ice is fully crushed. If you prefer a drink with ice chunks, I suggest adding full ice cubes or crushed to your glass before serving.
  • This drink is best served right away for that perfect frozen texture.
