Red, White and Blue Fruit Cups

These Red, White, and Blue Fruit Cups are the ultimate summer dessert. Fresh fruits and whipped cream make a crowd-pleasing treat.

Equipment

  • Stand Mixer and Whisk Attachment

Ingredients

  • ¾ cup heavy cream
  • ¼ cup icing sugar or more
  • 1 ⅓ cup strawberries or more, chopped small
  • 2 cup blueberries or more

Instructions

  • In the bowl of a stand mix (or a large bowl with a hand mixer) add heavy cream and icing sugar and run on medium speed for about 10 minutes. Keep an eye on it around the 8-minute mark, it will be done when you have stiff peaks. Taste and add more icing sugar as desired. Set aside.
  • Fill your first container with about ⅓ cup strawberries, ½ cup whipped cream, and ½ cup of blueberries. Repeat with the remaining 3 cups.
  • If desired, top with an additional dollop of whipped cream and a strawberry.

Notes

  • For the best results, use a cold mixing bowl when making whipped cream. If your bowl doesn’t fit in your fridge, you can add very cold water and some ice and leave it for 5-10 minutes, then dry and use!
  • Add more icing sugar if you prefer a sweeter whipped cream.
  • The fresher the fruit, the better the flavor and texture.
  • This easy dessert is best enjoyed fresh to keep the whipped cream fluffy and the fruit vibrant.
  • Prep the fruit and whipped cream separately in advance, then assemble just before serving.
  • These are perfect to bring to summer barbecues or summer picnics! I like to place my cups in a baking dish to prevent them from falling over during transport. If you have extra space, you can make a grid with masking tape or add some tea towels in between to fill the gaps.
