Watermelon Mojito

Equipment

Ingredients

  • 4-6 fresh mint leaves
  • 4 ounces watermelon juice
  • 2 ounces light rum
  • 1 ounce simple syrup
  • 1 tablespoon lime juice freshly squeezed (about ½ lime)
  • club soda if desired

Instructions

  • In a cocktail shaker add mint leaves and muddle about 5-6 times to release some of the oils.
  • Fill about halfway with ice then add watermelon juice, rum, simple syrup and half a lime (or more).
  • Shake until chilled and strain into a glass with ice.
  • Garnish with watermelon cubes and fresh mint leaves.
  • If desired, top with club soda.

Notes

  • Use ripe watermelon — a good watermelon has deep color, firm flesh, and plenty of juice.
  • Use the end of a wooden spoon or a muddler and press mint leaves 5–6 times, with firm pressure but not too hard, to release oils.
  • Cold ingredients = less ice melt and more flavor.
  • Taste before adding more simple syrup — especially if your watermelon juice is extra sweet.
