Watermelon Vodka Cocktail

Ingredients

  • 8-10 cups seedless watermelon chunks
  • 1 cup vodka or more
  • β…“ cup lime juice freshly squeezed
  • 1 tablespoon simple syrup or more
  • club soda optional (for fizz)

Instructions

  • In batches add watermelon to a blender and run until smooth.
  • Strain into a spouted measuring cup then pour into a large pitcher. Strain twice for an extra smooth drink.
  • Pour in vodka, lime juice and simple syrup, and stir well.
  • Enjoy right away or chill in the fridge. When ready to serve, pour into a glass full of ice.
  • If you like a fizzy drink leave some room to top with club soda.

Notes

  • Chill ahead β€” Make the fresh watermelon juice earlier in the day and refrigerate so it’s extra cold.
  • Choosing a ripe, sweet and juicy watermelon allows for the best flavor.
  • Use a fine mesh strainer, and strain twice, to remove pulp for a smooth sip.
  • Taste before serving and add more simple syrup if you want a sweeter cocktail.
  • Serve in a rocks glass, cocktail glass, or mason jar with plenty of ice cubes.
