Ingredients

  • 2 cucumbers chopped into large chunks, peeling optional
  • 5 cups water
  • 4 limes juiced (about ⅓ cup)
  • ½ cup granulated sugar

Instructions

  • Add cucumber chunks to a blender and just enough water to cover the cucumber without going over the max line; reserve the rest for later. Blend on high until smooth and well mixed.
  • Strain the cucumber juice into a pitcher or a large, spouted measuring cup with a fine mesh strainer or a cheesecloth. Repeat as often as need for desired consistency.
  • Once in a pitcher add sugar, lime juice and the remaining water. Stir well to combine and dissolve the sugar.
  • Serve over ice.

Notes

  • Blended: Blend the cucumber and water until completely smooth so the natural cucumber flavor is fully released.
  • Glass: Serve in a tall glass filled with ice so the drink stays crisp and refreshing.
  • Garnishes: A thin cucumber slice, lime wheel or a few fresh mint leaves keep it simple and fresh.
  • Straining: Straining the cucumber mixture once or twice creates a smoother drink with a cleaner texture.
