Add cucumber chunks to a blender and just enough water to cover the cucumber without going over the max line; reserve the rest for later. Blend on high until smooth and well mixed.

Strain the cucumber juice into a pitcher or a large, spouted measuring cup with a fine mesh strainer or a cheesecloth. Repeat as often as need for desired consistency.

Once in a pitcher add sugar, lime juice and the remaining water. Stir well to combine and dissolve the sugar.

Serve over ice.

Hint: Taste before serving and adjust with a little extra lime juice or sugar depending on your preference.
