Ingredients

  • 2 pounds pork sausage spicy
  • 2-16 ounce blocks Velveeta cut into cubes
  • 1-10 ounce can Ro*tel Original (tomatoes & chiles), undrained
  • 1-12 ounce can fire roasted tomatoes undrained

Instructions

  • In a large skillet cook sausage until cooked through on medium high heat. If desired, strain fat.
  • Add remaining ingredients to the pan, lower the heat slightly and allow the Velveeta to melt fully.
  • Transfer to serving dish (at least 1.5 quart/ 11x17) and serve warm.

Notes

  • Low Heat: Melt the Velveeta slowly over medium heat or slightly lower to prevent scorching.
  • Thin the Dip: If the cheese dip gets too thick, stir in a small splash of milk.
  • Stir Occasionally: Give the dip a stir every so often so the cheese stays smooth and evenly melted.
  • Drain Excess Grease: After browning so the dip stays smooth.
  • Refrigerator: Store in an airtight container for up to 4 days. Reheat gently over low heat or in the microwave, stirring often.
