See the recipe card below for the exact quantities of each ingredient.

  • French Green Beans: The base for this recipe, fresh beans have a beautiful snap when biting into them.
  • Shallot: A mild onion flavor that brings a bit of sweetness.
  • Garlic Cloves: A punch of deep flavor with a subtle layer of heat that really adds to this dish.

How to Make Sautéed Green Beans with Shallots

This is a quick and easy dish that comes together in no time at all. Prep your ingredients and get your pan heated and you’ll be enjoying deliciousness before you know it.

Prep your beans by trimming off the ends.

Over medium heat, melt butter in and cook shallot, about 3-5 minutes.

Add garlic and cook until fragrant.

Place the beans into the pan and cook to your desired tenderness, about 6-10 minutes, stirring occasionally for even cooking.

Hint: It is important to give your shallots time to cook and really pull out their flavor before adding in the garlic. Garlic can cook quickly so you do not want to risk it burning while the onions cook.

How to Store Green Beans Sautéed with Shallots and Garlic

If you have some leftovers, or even bought too many beans, here are some helpful hints.

  • Refrigerator: Once cooled, place in an airtight container and store for 3 to 5 days.
  • Freezer: Cooked green beans can be frozen once they are cooled. Place them on a baking sheet, on parchment paper and allow them to freeze. Transfer to a freezer-safe bag or container and freeze for up to 3 months. Thaw before lightly cooking again on the stove top.
  • Reheating: Bring to room temperature and reheat in the microwave on low, or on the stovetop until warmed through.
  • Make Ahead: You can chop your shallots and garlic and store them in separate airtight containers for at least 3-5 days in the fridge.

What to Serve with Sautéed Green Beans with Shallots

Green beans are one of the universal veggies that go with almost anything. Here are some of our favorite pairings.

  • Chicken Thighs with Honey: With its slightly caramelized shallots, green beans complement the sweetness of the chicken's honey glaze.
  • Herb Butter Turkey (and gravy): The bright and fresh flavor of the green bean cuts through the richness of a turkey and gravy dinner.
  • Idahoan Mashed Potatoes: Mashed potatoes are a creamy and comforting side dish, and sautéed green beans add a different texture.
  • Baked White Cheddar Mac and Cheese: The beans add a freshness that cuts through the cheesy richness, adding the perfect amount of balance to your plate.
  • Roasted Butternut Squash and Garlic Soup: Velvety soup and crunchy, savory beans are a perfect match.
  • Prime Rib Roast: A nice crisp bean pairs perfect with any juicy roast.
  • Oven Roasted Salmon: The simplicity of the green beans highlights and enhances the delicate flavor of salmon.
  • Baked Pork Chops: The earthy and garlicky flavors of the green beans pair well with a savory pork chop.

Top Tip

Fresh green beans should be used as quickly as possible for the best flavor and texture. If you find yourself with too many green beans, then follow my freezing instructions for flash freezing to maintain freshness and nutritional value.

Frequently Asked Questions About Sautéed Green Beans with Shallots

Still have more questions about Sautéed Green Beans with Shallots?

How long should I cook the Green Beans for?

We recommend cooking them about 6-10 minutes, which gives you a nice crisp bean that is lightly cooked and immersed with flavor. If you add a couple tablespoons of water into the pan and put a lid on them and cook for a few minutes you can get a faster cooked bean that is more soft.

Can I use a different type of onion instead of shallots?

Absolutely. If you have a preferred onion choice, you can use that. The flavors will vary based on your selection. We recommend yellow for a sweeter flavor, or white for a more strong onion profile.

Do I need to blanch the Green Beans before sautéing them?

Not necessarily. If you want a softer bean you can blanch them first, but I prefer to just cook them with a little water and the pan's lid on, to save time.
