Yes you can! We have not tested this ourselves, but using a dairy-free whipped topping and a vegan cream cheese is an option.

How do I get the right amount of mint flavor in a Grasshopper Pie?

Mint extract is a very intense flavor, so we recommend adding it last. Mix it in well and test a little on a spoon before adding more. You can start with ½ - 1 teaspoon of mint extract if you are concerned it might be too much. I enjoy mint, and find that 1 ½ teaspoons is perfect for me.
