Though neither have anything to do with actual grasshoppers, we love the fun, memorable, and nostalgic name for a classic dessert.

Yes you can! We have not tested this ourselves, but using a dairy-free whipped topping and a vegan cream cheese is an option.
Mint extract is a very intense flavor, so we recommend adding it last. Mix it in well and test a little on a spoon before adding more. You can start with ½ - 1 teaspoon of mint extract if you are concerned it might be too much. I enjoy mint, and find that 1 ½ teaspoons is perfect for me.
You can place it in the freezer for 4 hours prior to slicing to stiffen it up a bit. This is a great way to get a perfect slice, and a different texture to the pie. I prefer to serve it cold myself.
