  • Quick & Easy: Made with a cake mix, this recipe requires minimal ingredients and effort.
  • Moist & Chewy: Who needs eggs!? The combination of Greek yogurt and butter gives these brownies a rich texture.
  • Beautiful Color: The pink hue makes them perfect for holidays like Valentine's Day, pink themes parties or spring celebrations.
  • Strawberry Flavor: Sweet and fruity with an extra boost from the glaze.
  • Great for Sharing: A fun and unique dessert to bring to parties, potlucks, or bake sales.

Ingredients

Just a few simple ingredients to make these strawberry cake mix brownies.

Strawberry Brownies Ingredients

See the recipe card below for the exact quantities of each ingredient.

  • Boxed Strawberry Cake Mix: The main ingredient in this recipe, this provides the strawberry flavor and the base of the cakey brownies.
  • Sea Salt: This is optional, but it enhances the flavors slightly.
  • Plain Greek Yogurt: Used in replace of eggs to keep everything moist and add some structure to the brownies.
  • Unsalted Butter: Used to create that fudgy texture. Salted can be used as well, but I would omit the added salt.
  • Pure Vanilla Extract: Adds a subtle vanilla flavor.
  • Icing Sugar/Powdered Sugar: The main component to the glaze.
  • Strawberry Jam: Adds an extra strawberry taste to the glaze.
  • Heavy Cream/Whipping Cream: Used to thin the glaze and adds an extra smooth flavor.

For this recipe, you'll want to have on hand an 8x8 metal baking pan, parchment paper, measuring cups and spoons, large mixing bowl, whisk, and a spatula.

Substitutions and Variations

Love this strawberry brownie recipe but want to make it your own next time? Here are some ways to mix up this sweet treat.

  • Cake Mix: Swap strawberry cake mix for your favorite; we love making lemon brownies or fudgy chocolate brownies.
  • Greek Yogurt: Use sour cream for a similar tangy texture. Alternatively, you can add an egg plus one egg yolk.
  • Butter: Replace with melted coconut oil for a dairy-free option.
  • Glaze Swap: Substitute the glaze for a strawberry frosting. Or melt dark chocolate chips and drizzle them on top of the brownies.
  • Add-ins: Fold in white chocolate chips or freeze-dried strawberries for extra texture and sweetness.
  • Add-ons: Add some diced fresh strawberries on top of the brownies.

How to Make Strawberry Brownies

How to Store our Strawberry Brownies Recipe

These usually do not last that long in our house but here are a couple ways to store these easy strawberry brownies.

  • Refrigerator: Once cooled, place in an airtight container for 3-4 days. If you leave the cooled brownies in the baking dish you can cover with plastic wrap and place in the fridge.
  • Freezer: Place in a freezer safe container for up to 3 months. Thaw in the fridge overnight and enjoy.

What to Serve with Strawberry Brownies

  • Vanilla Ice Cream: A classic pairing that enhances the rich strawberry flavor.
  • Whipped Cream: Light and fluffy, adding a creamy contrast to the chewy brownies.
  • Fresh Berries: Serve with extra strawberries, raspberries, or blueberries for a fresh touch.
  • Lemonade or Iced Tea: A refreshing drink to balance the sweetness. Our honey strawberry lemonade is a perfect pairing, and for a boozy version try our Hennessy lemonade.
  • Coffee or Espresso: The boldness of coffee pairs well with the fruity flavors. Try our Irish coffee with Baileys, espresso Irish coffee or our caramel mocha coffee!
  • Strawberry Shortcake: Serve alongside a traditional shortcake for a berry-filled dessert spread.
  • Strawberry Crisp: The crunchy texture of the crisp topping is a nice contrast.

Top Tips

Here are some tips for the best results when making this easy recipe.

  • Don’t Overbake: These brownies are meant to be soft and chewy, so check for doneness at 18-20 minutes.
  • Line Your Baking Dish: Parchment paper makes it easier to remove and cut the brownies cleanly.
  • Let Them Cool: Allow brownies to cool completely before adding the glaze to prevent it from melting into the bars.
  • Adjust Glaze Consistency: If it’s too thick, add an extra splash of cream; if it’s too thin, add more powdered sugar.
