  • Minimal Mess: Whipping up your brownies and pouring them into your prepared pan is all you're left cleaning at the end of this quick treat!

Ingredients

It can't get simpler with this one. Using one box of brownie mix and any ingredients that the box requires and refrigerated cookie dough. It’s really that easy!

Chocolate Chip Cookie Brownie Bars Ingredients

See the recipe card below for the exact quantities of each ingredient.

  • Brownie Mix: A simple store-bought item plus the package ingredients is the base for this recipe.
  • Refrigerated Cookie Dough: The added bonus to a delicious brownie that completes this dessert.

For this recipe, you'll want to have on hand a 7x11 glass baking dish, parchment paper, medium mixing bowl, measuring cups and spoons, spatula, and a cooling rack.

Substitutions and Variations

It is tricky to mix up a good thing, but we have a couple tips.

  • Sugar Cookie Dough: If sugar cookies are your favorite type of cookie, try that instead.
  • Peanut Lover: If you're like me, peanut butter is always a yes! Try a peanut butter cookie dough for another great combination.
  • M&Ms: Use a colourful cookie dough substitute with M&M cookie dough!
  • Salted Caramel: Add a twist to the base by using a Salted Caramel Brownie mix!

Preheat an oven to 350F and place your rack in the middle. Line a 7x11 glass baking dish with parchment paper, leaving the sides high for easy removal. Set aside.

Make brownie batter in a medium bowl according to the box, and pour into prepared dish (note: you do not have to spread the batter out, it will spread during the next step).

Place lightly flattened pieces of cookie dough and place them throughout the brownie batter. Push them in slightly.

Bake for about 40 minutes or until the brownies are cooked through and the cookies are golden.

Cool in the dish on a cooling rack until fully cooled before removing, then slice and enjoy.

Hint: Use the toothpick test to check the doneness of your brownies. Poke your toothpick into the center of the dish to check your brownies. The toothpick should come out with moist crumbs.

Frequently Asked Questions About Chocolate Chip Cookie Brownie Bars

Do you have questions about making Chocolate Chip Cookie Brownie Bars? We are here to help.

How do I prevent my cookie layer from browning too much?

If you find that your top cookie layer is browning too quickly, you can cover your pan with aluminum foil halfway through cooking.

Can I make these in a different pan size?

If you do not have a 7x11 baking dish, you can use an 8x8 or 9x9 square baking pan. Be mindful that this will extend the bake time. Test the doneness of the bars by inserting a toothpick in the centre. The bars are finished when a toothpick comes out clean or with a moist crumb.

How do I keep the two layers from mixing together?

By spreading the brownie layer first, and gently placing the flattened pieces of cookie dough on top, the layers will remain separate. The cookie layer can be pressed into the brownie later slightly before baking, but they will stay distinct while they bake to create the cobblestone look of the bars.

Can I add extra mix-ins?

These bars can be customized to your liking with the addition of nuts, milk chocolate chips, white chocolate chips, peanut butter chips, caramel bits, and more.

This is one of my go-to recipes to whip up for the kiddos. We always have refrigerated cookie dough of some type in the house and like to mix up the flavors! So quick and simple.

The cookie dough is stated in grams. How much in ounces? is this a tub of cookie dough, or a roll that you slice?

Hey Betty, thanks for your question. You can use a roll or a tub and just weigh it out yourself if you want. We used one that was pre-portioned cookies and flattened them lightly as we went along with the recipe. 454 grams is 16 ounces (also a pound). I hope this helps. Happy baking, and please come back and leave us your thoughts after you are done!
