Equal parts fruit, sugar and water for this quick and easy Blackberry Simple Syrup.

  • Blackberries: We use fresh fruit but frozen (slightly thawed) will work if it is not blackberry season. 
  • Granulated Sugar: White sugar adds sweetness to the tart berries, while also acts as a thickening agent for the syrup.
  • Water: Helps to create the syrup.

For this recipe, you'll want to have on hand a small saucepan, measuring cups, spatula, fine-mesh trainer and an airtight mason jar.

Substitutions and Variations

With such minimal ingredients there is not a whole lot you can do to change up this recipe, but here are so helpful ideas.

  • Sweetener: Use honey or maple syrup instead of granulated sugar for a more natural sweetness. You can use a brown sugar for a more molasses take on this recipe.
  • Frozen Blackberries: If fresh blackberries aren’t in season, frozen blackberries work just as well—just let them thaw slightly before cooking. You may need to cook them down a little longer if there is some added moisture. 
  • Mix & Match: Combine with other berries like raspberries or blueberries for a mixed-berry syrup!
  • Flavor Variety: Add a sprig of fresh thyme, rosemary, or a cinnamon stick while simmering for an herbal or spiced variation.
  • Citrus Boost: A squeeze of fresh lemon or orange juice brightens up the flavor.
  • Low-Sugar Version: Reduce the sugar and add a splash of vanilla extract for a slightly less sweet but still flavorful syrup. This may provide a shorter shelf life of the simple syrup.

In a medium saucepan ring blackberries, cup of water and a cup of sugar to boil over medium heat.

Keep a rolling boil for about 15 minutes, stirring periodically as the sugar dissolves. Adjust the heat if needed.

Allow it to cool slightly, then strain into an airtight glass jar.

Hint: Use a fine-mesh strainer to remove the blackberry seeds and pulp. For an ultra-smooth syrup, strain twice.

How to Store Simple Blackberry Syrup

Depending on how you make this syrup can change how long it lasts. Here are some ways to change it up.

  • Classic Simple Syrup: 1:1 ratio of sugar to water, cooked down and then stored in the fridge should last up to 1 month in an air tight container.
  • Thick Simple Syrup: 2:1 ratio of sugar to water, cooked down to form a thicker version and then stored in the fridge should last up to 6 months in an air tight container.

What to Serve with Blackberry Simple Syrup

  • Blackberry Cocktails: Adds sweetness to a simple cocktail/mocktail like our Blackberry Champagne Drink. Whether you make alcoholic or non-alcoholic drinks here are some classic cocktails to try: blackberry mojito, blackberry Moscow mule, or blackberry margarita!
  • Cold Drinks: Add a tablespoon or two into a pitcher of your favour lemonade, iced tea or sangria. Experiment with any of your favorite drinks.
