Ingredients

A short trip to the grocery store and you will be ready to make a stack of pancakes in no time!

Crispy Fluffy Pancakes Ingredients

See the recipe card below for the exact quantities of each ingredient.

  • All-Purpose Flour: Any flour preference will work for this recipe.
  • Granulated Sugar: Used to add a light sweetness.
  • Baking Powder: Helps create the bubbles that keep these pancakes thick.
  • Sea Salt: Enhances all the flavors.
  • Whole Milk: Lightly thins the batter while adding moisture.
  • Egg: Keeps the ingredients all together and adds structure.
  • Unsalted Butter: Adds additional moisture, flavor and texture.
  • Pure Vanilla Extract: Adds a subtle hint of vanilla.
  • Coconut Oil/Vegetable Oil: High smoke point oils perfect for cooking on the stovetop.

For this easy recipe, you'll want to have on hand a large bowl, medium bowl, measuring cups and spoons, whisk, and a large skillet.

Substitutions and Variations

Here are some helpful ideas for you to change these crispy pancakes.

  • Dairy-Free: Use almond milk or oat milk and swap the butter for coconut oil or a dairy-free alternative.
  • Fluffy Buttermilk Pancakes: Use a buttermilk substitute for whole milk instead for crispy buttermilk pancakes.
  • Add-Ins: Mix in blueberries, chopped strawberries, mini chocolate chips, or mashed banana to change up the flavor.
  • Flavored Extracts: Try almond or coconut extract in place of vanilla for a twist.
  • Flour Swaps: Sub the flour with whole wheat for a nuttier flavor.
  • Maple Butter Topping: Mix softened butter with a bit of maple syrup for a sweet topping.
  • Color it Up: Add a few drops of food-safe color for a festive party or celebration.

How to Make Crispy Fluffy Pancakes

Check out how quick and easy it was to make the best fluffy pancakes in just a few simple steps.

Crispy Fluffy Pancakes batter being made in a bowl
Crispy Fluffy Pancakes being made in a pan

In a large mixing bowl whisk flour, sugar, baking powder and sea salt. Set aside.

In a medium bowl whisk whole milk and egg, then add melted butter and vanilla extract. Stir to combine.

Add wet ingredients to dry ingredients and combine with a spatula (note: the batter will be thick).

Heat large skillet on medium low heat, then add about 1 teaspoon coconut. Once melted add a ¼ measuring cup of batter and cook pancakes until bubbles at the edges of the pancake have popped. Flip, then cook the pancake for about another 20 seconds, or longer for crispier edges.

Repeat with the remaining batter, adding more oil as needed.

Store a single layer of cooked pancakes in a warm oven on a wire rack or on a rimmed baking sheet.

Hint: Mix only until combined. A few lumps in the batter are perfectly normal and help keep these pancakes thick and fluffy.

How to Store Fluffy Crispy Pancakes

Store these leftover pancakes to enjoy later.

  • Refrigerator: Once cooled, place in an airtight container with parchment paper between each pancake for 4-5 days.
  • Freezer: Wrap each pancake tightly in plastic wrap, then in a freezer safe container or bag and they can last up to 3 months.
  • Reheating: Place in a toaster for 2-3 minutes or until warm.

What to Serve with Crispy Fluffy Pancakes

You can serve a batch of pancakes on their own or pair them with other breakfast items. Here are some ideas to a big brunch or a solo breakfast.

  • Cold Beverages: Try an iced vanilla latte or our iced apple crisp macchiato.

Top Tips

Here are some of our tips to help you make the best pancakes from this easy recipe.

  • Medium-Low Heat is Key: Too hot and the outsides will burn before the centers cook.
  • Use Coconut Oil: It gives a lightly crisp finish without overwhelming the flavor.
  • Let the Batter Rest: A few minutes while the pan heats up to help the flour hydrate.
  • Flip Once: Wait for bubbles to pop near the center before flipping to avoid deflating them.

Frequently Asked Questions About Fluffy Crispy Pancakes

Do you have questions about making crispy fluffy pancakes?

Can I use a different flour?

Yes, you can sub in a 1:1 gluten-free blend or whole wheat flour, though texture may vary slightly.

Can I make the batter ahead?

It's best fresh, but you can mix dry ingredients in advance to save time.

What's the best pan to use?

A non-stick skillet or cast iron pan works best for even browning.

Can I freeze leftovers?

Yes! Let them cool completely, then freeze between layers of parchment paper. Reheat in the toaster, oven, or air fryer—this helps maintain their crisp texture!

How do I get perfectly round pancakes?

Use a ¼ cup measuring scoop and gently spread into shape right after adding to the pan to make each pancake a uniform size.
